The Olives are picked at critical stages of ripeness, processed as soon as possible after harvest and must have free fatty acid levels below 1%. True Extra Virgin Olive Oil is a natural food which has legendary health attributes.
Because we have varietal Extra Virgin Olive Oils, you are able to taste differences and choose an oil that suits your tastes and needs.
Table Olives are picked by hand to avoid bruising an
d to discard damaged fruit. We cure the olives in a brine for several months to soften their natural bitterness. When ready we hand grade them again before putting them into jars. The variation in colours are natural, as are the flavours and texture of each variety.
We also have an oil pressing facility to support the local growers.
